One-Pot, Zero-Waste Lentil Curry

Ingredients:

• 1 cup of red or brown lentils, rinsed
• 2 cups of cold water
• 1-2 teaspoons of curry powder (adjust to your taste)
• 1 stock cube (vegetable or chicken)
• 1-2 tomatoes, diced
• 1 spring onion, chopped
  

Method:

1. Preheat your oven to 180°C (350°F).
2. In a stainless steel, oven-safe lunch box, combine the rinsed lentils, water, and a dash of curry powder.
3. Crumble in the stock cube, then add the diced tomatoes and chopped spring onion. Stir everything together until well combined.
4. Place the lunch box in the preheated oven and bake for 30-35 minutes.
5. Halfway through the cooking time (around the 15-20 minute mark), check on the curry. If it looks dry or the lentils have absorbed all the water, add a splash of water to prevent it from sticking.
6. The curry is ready when the lentils are tender and the sauce has thickened.
7. Serve hot, or simply place the lid on your stainless steel lunch box and store the leftovers in the fridge for a ready-to-reheat meal.
