Ingredients:
- 1 cup of red or brown lentils, rinsed
- 2 cups of cold water
- 1-2 teaspoons of curry powder (adjust to your taste)
- 1 stock cube (vegetable or chicken)
- 1-2 tomatoes, diced

Method:
- Preheat your oven to 180°C (350°F).
- In a stainless steel, oven-safe lunch box, combine the rinsed lentils, water, and a dash of curry powder.
- Crumble in the stock cube, then add the diced tomatoes and chopped spring onion. Stir everything together until well combined.
- Place the lunch box in the preheated oven and bake for 30-35 minutes.
- Halfway through the cooking time (around the 15-20 minute mark), check on the curry. If it looks dry or the lentils have absorbed all the water, add a splash of water to prevent it from sticking.
- The curry is ready when the lentils are tender and the sauce has thickened.
