Ingredients:
- 4 tbsp olive oil
- 2 tbsp fresh lemon juice (from 1 lemon), plus 1 extra lemon cut into wedges for serving
- 2 tbsp red wine vinegar
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and freshly ground black pepper, to taste
- 2 courgettes, sliced into thick rounds
- 2 red onions, peeled and cut into ¾-inch chunks
- 12 cherry tomatoes
- Optional: Halloumi cheese, cut into large cubes
Method:
- In a moonmoon silicone bag, combine the olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and pepper.
- Add the courgettes, red onions, cherry tomatoes, and halloumi (if using). Seal the bag.
- Shake well to coat everything evenly in the marinade.
- Refrigerate for at least 2 hours to allow the flavours to develop.
- Thread the vegetables and halloumi onto skewers.
- Cook on a barbecue (or grill) until the vegetables are tender and lightly charred, and the halloumi is golden.
- Serve hot, with lemon wedges on the side.
