Ingredients:

  • 4 tbsp olive oil
  • 2 tbsp fresh lemon juice (from 1 lemon), plus 1 extra lemon cut into wedges for serving
  • 2 tbsp red wine vinegar
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper, to taste
  • 2 courgettes, sliced into thick rounds
  • 2 red onions, peeled and cut into ¾-inch chunks
  • 12 cherry tomatoes
  • Optional: Halloumi cheese, cut into large cubes

Method:

  • In a moonmoon silicone bag, combine the olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and pepper.
  • Add the courgettes, red onions, cherry tomatoes, and halloumi (if using). Seal the bag.
  • Shake well to coat everything evenly in the marinade.
  • Refrigerate for at least 2 hours to allow the flavours to develop.
  • Thread the vegetables and halloumi onto skewers.
  • Cook on a barbecue (or grill) until the vegetables are tender and lightly charred, and the halloumi is golden.
  • Serve hot, with lemon wedges on the side.
