Cashew and Almond Bars

Whip up no-bake vegan energy bars filled with dates, nuts and cocoa-protein-rich, fibre-packed and set in an hour for quick, healthy, grab-and-go snacking.

 

 

 

 

These delicious bars will give you lots of energy.  Packed with protein, vitamins, essential fats, and fibre, they are a quick, easy and healthy snack for all the family.

Ingredients:

  • 150g soft ‘ready-to-eat’ Medjool dates
  • 100g whole almonds
  • 100g ground almonds
  • 200g cashews
  • 2 tbsp cocoa powder
  • 3 tbsp water

Method:

  1. Combine the dates, cashews, almonds and cocoa powder in a food processor and process until fully combined.
  2. Add one tablespoon of water at a time until it starts to look like cookie dough.
  3. Add the mix to a brownie tray, cover with some beeswax wrap and leave to set in the fridge for an hour. 
  4. Cut into bars and store in the fridge for up to a week.

Makes approx 18 bars.  Vegan recipe.
