Flapjacks are a healthy and easy homemade snack to make for you and your family. The combination of oats, dried fruits and nuts means they will give you a good boost in energy. This recipe also gives you plenty of opportunity to tailor your flapjacks to your own taste, or to vary the combination each time depending on what you need to use up. Happy cooking... and snacking!
Ingredients
250g (9oz) rolled oats
150g (50oz) olive oil spread
75g (3oz) brown sugar
75 g (30oz) crunchy peanut butter
1 tsp cinnamon
3 tbsp of honey
150g nuts, such as chopped pecans, walnuts, walnuts. You could also add some ground almonds to the mix.
150g (5oz) dried fruit, such as raisins, dates or apricots (chopped)
Method
Preheat the oven to 180 degrees celcius or Gas Mark 4. Line a tin approximately 20cm in length.
Add the spread, peanut butter, sugar and honey to a non-stick saucepan and heat until the mixture has melted (stirring from time to time).
In a large bowl, mix the oats, nuts, dried fruit and cinnamon. Add the melted mixture and stir until all the ingredients are combined.
Transfer into the prepared tin and level out the surface. Bake in the oven for 20 - 25 minutes, until golden brown around the edges but still soft in the middle. Leave in the tin to cool and then cut into pieces - size and shape are your choice!
Storage
Store at room temperature in a sealed reusable silicone bag for approximiately one week. They can also be frozen.
