Butternut Squash Soup

This soup is really easy and just perfect for harnessing those Autumn vibes!  Warming and sweet, it's our favourite go-to soup for the whole family.  Perfect for batch cooking and freezer friendly too.  Just three core ingredients - it doesn't have to be difficult to taste good.

Ingredients

1 Butternut Squash

1 Potato (regular or sweet potato)

1 Onion

Knob of butter or 2 tbsp of olive oil

1000ml Stock (your choice - vegetable or chicken)

Method

A pinch of nutmeg, salt and pepper

1.  Roughly chop your onions and fry in butter or olive oil.

2.  Chop potato and butternut squash and add both to the pan.  Fry for two minutes.

3.  Add the stock, nutmeg, salt and pepper and simmer until the vegetables are soft.

5.  Blitz in a food processor or blender until smooth

Simply serve or store for later in our reusable freezer bags!
